Chocolate Pecan Paleo Loaf

I’m not much of a cook BUT I can bake.

It’s somewhat of a genetic thing, my Mum’s baking is THE BOSS.

She made a point of teaching me “her recipes” for when she dies (her words not mine) but I’ll admit that since she isn’t dead yet I tend to just ask her to bake on my behalf after all food tastes better when your Mum makes it.

Although in my case my kids will pick Nanna’s cooking over mine and rightly so. 😉

I could solely blame her for my fat days, except in reality that was more to due with my penchant for eating every meal at Wendys oh and alcohol.

Alcohol + Wendys = Ginormous arse (and not in a good “she squats” kind of way).

Anyway when I jumped on board the Paleo bandwagon the thing I missed was my Mums baking, I tried some paleo recipes but none of them had every been good enough to replace the real thing. Until now ..

Chocolate Pecan Paleo Loaf

Ingredients:
1 large very ripe banana (mashed)
1 soft pear (peeled and mashed) – optional
2 large eggs
2 c almond meal
75g butter
2 T raw honey
1 t baking powder
1 t cinnamon
1 T raw cocao powder

Toppings:
1 T chopped pecans
2 T dark chocolate chips

Preheat oven 180 degrees celcius

Melt honey and butter
Add remainder of ingredients and mix well (I use an electric beater)
Pour into well greased or baking paper lined loaf tin.
Sprinkle loaf with pecans and chocolate chips

Bake 40-45 minutes (or until knife comes out clean)

Leave to cool in tin for 5-10 minutes then remove from tin and cool on a wire rack.

Store in an air tight container in the fridge.
