Just Peachy Paleo Loaf
On our weekly shopping day (Thursday) I bake a paleo loaf using whatever left over fruit we have from the week prior.
I have two base recipe’s that I follow (one which I use more than the other just because it contains less ingredients) and I mix and match the flavors with whatever I can find in the house.
Waste not – want not ..
This week we didn’t have any left over fruit apart from a solitary brown banana, I was going to make a “plain” cinamon flavored loaf when I noticed a can of peaches in the back of the pantry.
One peach paleo loaf coming right up!
It looked good enough to eat and the taste test was not disappointing, it’s much lighter in texture than other paleo loaves I’ve made (and bought) in fact this one was good enough to share …(the recipe that is, I don’t share “actual” food) 😉
“Just Peachy” Paleo Loaf
Ingredients:
1 large very ripe banana (mashed)
1 peach (fresh or tinned (in juice))
2 large eggs
2 c almond meal
75g butter
2 T raw honey
1 t baking powder
1 t vanilla extract
1 t cinnamon
Preheat oven 180 degrees celcius
Slice peaches if using fresh fruit.
Set aside a few slices for the top of your loaf then mash half of the remaining fruit and dice the remainder.
Melt honey and butter (let cool)
Add remainder of ingredients except diced peaches and mix well with an electric beater.
Fold in the diced peaches.
Pour into well greased or baking paper lined loaf tin.
Top the loaf with sliced peaches.
Bake 40-45 minutes (or until knife comes out clean)
Leave to cool in tin for 5-10 minutes then remove from tin and cool on a wire rack.
Store in an air tight container.
